The challenge? Recreate two of my Thanksgiving favorites without butter. Brummel & Brown Spread is made with nonfat yogurt and has zero trans fats and no hydrogenated oils. With 50% less fat and calories than butter, Brummel & Brown is going to make Thanksgiving just a little healthier.

An easy twist on the classic Thanksgiving mashed potatoes.

4 large baking potatoes
1 cup milk
1 Tablespoon ranch seasoning mix
8 strips of bacon, cooked
1/2 cup Brummel & Brown
1 cup cheddar cheese
Salt and pepper to taste
Bake potatoes until fully cooked. (Peeling and boiling potatoes will work as well. To save time I cooked mine using the baked potato setting on my microwave.) Cut potatoes in half and scoop out inside of potatoes. In a mixing bowl combine potatoes with milk, ranch seasoning, salt, pepper and Brummel & Brown. Mix until creamy.  (Add more milk if needed.) Crumble bacon into small pieces and fold into potato mixture.
Add potatoes to ramekins or a casserole dish and top with cheddar cheese. Bake at 350 degrees until desired browning is achieved.

Of course any Thanksgiving meal needs a dessert or two. (Or twelve!) These oatmeal pumpkin chocolate chip cookies are one of my favorites. Delicious but not overly sweet. A perfect treat at the end of a big meal.

2 cups flour
1 1/2 cups oats
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Brummel & Brown
1 1/2 cups brown sugar
1/2 cup sugar
1 cup pumpkin
1 teaspoon vanilla
1 egg
1 cup semi-sweet chocolate chips

Mix flour, oats, baking soda, cinnamon, pumpkin pie spice and salt together and set aside. With mixer blend Brummel & Brown with both sugars. When completely mixed add the egg, pumpkin and vanilla. Mixture will be thin. Slowly add dry ingredients. Once everything is well mixed fold in chocolate chips.
Use cookie scoop to add dough to cookie sheet lined with parchment paper. Bake at 350 degrees for approximately 15 minutes. Cool completely before serving.
