Hello, summer. How have you been? You’ve been missed, and to be honest you’re taking too long to get here. I’m ready for all of the fun you’re planning to bring along with you this year-especially the food.

The classic pasta salad meets the classic caprese salad in this ridiculously easy recipe hack for Caprese Pasta Salad. Summer is too busy to spend your time in the kitchen. If you can boil water, you can make this recipe. If you can’t boil water? I’m really not sure how to help you…

Pasta SeasoningStart with a box of the classic Suddenly Salad. It has everything you’ll need for this recipe other than vegetable oil, basil, mozzarella and tomatoes. Well, water. You’ll also need water.

Boil the contents of the pasta package for 12 minutes. While the pasta cooks, mix the seasoning packet with 3 tablespoons of water, 2 tablespoons of water and 1 tablespoon of chopped basil. I used freeze dried basil for this which worked perfectly and saved me the trouble of chopping.

Caprese PastaRinse the cooked pasta with cold water, drain well and then toss with the seasoning mixture. Add fresh mozzarella pearls and fresh or sun dried tomatoes. I used sliced sun-dried tomatoes in my pasta-I just always like sun-dried tomatoes more than fresh. Caprese Pasta SaladCaprese Pasta Salad-that’s all it takes. See, told you it was easy!
