Place the chips in a microwave safe bowl and melt in the microwave at half power, stirring at least one per minute. (Don’t melt at full power or you could burn the chips!)
Chop 10 chocolate sandwich cookies using a mini prep of food processor. (Or go old school and beat them in a plastic bag with a rolling pin…)
Mix the cookie crumbs into the melted baking chips and spread into your bark mold or onto a parchment lined cookie sheet.
