I have seven jobs. (OK, fine, I only have three jobs.) So even though I can bake from scratch, whenever I can find a way to hack a recipe to within an inch of it’s life I’m all over it.  Enter these mini tiramisu trifles. It’s an easy dessert that tastes like you put in effort. But you didn’t. Who has time to spend all day soaking their lady fingers?

Hello, time-saving Sara Lee Pound Cake from Kroger. You see, this little gem is ready to do the heavy lifting and officially makes this recipe no bake. #HaveYourCake #Cbias #shopI popped the pound cake in the microwave for about 15 seconds, then proceeded to chop it into small squares. The filling for this is ridiculously easy to make. It’s pretty much throw everything into a bowl an mix. None of that combine this and fold that in slowly. You throw it in, you mix. You’re almost done. If you’re not a coffee fan, feel free to leave that out or add a little of the flavor extract of your choice. Feel as though instant coffee is a crime against nature? Feel free to add a little coffee extract or a few tablespoons of extra strong coffee.

Tiramisu Filling
Ingredients
  • 1 8 oz package cream cheese, softened
  • 1 small box vanilla pudding mix (3.4 oz)
  • 1 container whipped topping
  • 2 cups milk
  • 1 individual serving package of instant coffee
Instructions
  1. Combine cream cheese, pudding mix, whipped topping, milk and instant coffee together with mixer until well blended. Serve in layers with chopped pound cake to create mini tiramisu triffles. Top with cinnamon and shaved dark chocolate.

 

Take small dessert bowls and layer in chopped pound cake, then tiramisu filling, then pound cake, then more tiramisu filling.

Just like with real tiramisu, the longer they chill, the better they get. And fine, someone out there is going to be totally pedantic and say that this isn’t really tiramisu, just like last week when someone told me covering cookie dough in cinnamon doesn’t make it a snickerdoodle. And you know what I say to that? Fine. More for me. (And for the record, it was one of my besties who said it, and she’s forgiven. But she still doesn’t get any snickerdoodles.)
