Strawberry and Chia Puree

I confess to being a bit of a strawberry snob. It’s still about a month until it’s strawberry season here. (Local farm strawberries are the best!) Until then the strawberries I find in the grocery store are just not that good. That doesn’t, however, mean I haven’t craved strawberries.

An easy, delicious and nutritious way to enjoy my strawberries-even those that out of season less than awesome strawberries-is in a puree. I just sliced up my strawberries, added stevia for sweetness and threw them in the blender.

For a bonus health kick I added lots and lots ofchia to my puree. Thechia actually thickened the puree and the texture of the seeds mixed well with the strawberries. I enjoyed this chilled by the spoonful and even added some to a batch of cupcakes I made. Yum!
