My dad taught me how to make a lasagna. It was one of the first dishes I felt like I truly mastered. I couldn’t begin to count the pans of lasagna I’ve made. There have been so many versions though the years. In college, my bestie even tried to talk me into making a recipe for lasagna cupcakes. I think it was from a magazine-you know, pre food blog days. I never did get around to making those lasagna cupcakes…until now!
It turns out that they’re shockingly easy. At least they’re easy once you find the wonton wrappers at your grocery store. I’ve never actually shopped for wonton wrappers before and had no idea where to look. If you’re in the same boat, heads up-they’re in the produce section.
Those easy to find now that you know where to look wonton wrappers are going to act as the noodles for your lasagna cupcakes. Start by spraying your muffin tin with cooking spray and placing a wonton wrapper in each.
Spoon in your meat sauce. I made mine by browning a pound of ground beef, draining and adding a jar of Mezzetta’s Spicy Marinara. You can make sauce from scratch, but why bother when you can just grab a jar of Mezzetta? I sometimes add my own ingredients to sauce from a jar, but with the spicy marinara there wasn’t a need. My usual red pepper flakes would have been totally redundant.
Add another wonton wrapper on top of the meat sauce and then top with a spoon of cheese filling.
- 1 cup ricotta cheese
- ½ cup shredded parmesan cheese
- 1 egg
- Combine all ingredients in a bowl.
- Mix well.
Top your cheese filling layer with another wonton wrapper, then top with sauce and shredded mozzarella.
Bake in the oven at 350 degrees for 20 minutes. Allow to sit for at least 10 more minutes before removing from the muffin tin. If you don’t, your cupcake will fall apart and you’ll totally burn your mouth. I’m definitely not speaking from experience at all here. Nope, not at all.
- 36 Wonton Wrappers
- 1 Pound Ground Beef
- 1 jar Mezzetta Spicy Marinara
- 2 cups Mozzarella Cheese
- Cheese Filling
- Brown ground beef and drain well.
- Add spicy marinara sauce to ground beef.
- Spray muffin tin.
- Line each cup with one wonton wrapper.
- Add one spoon of sauce to each cup.
- Top with wonton wrapper.
- Add one spoon of cheese filling to each cup.
- Top with another wonton wrapper.
- Add one spoon of sauce and top with mozzarella cheese.
- Bake at 350 degrees for 20 minutes.
- Allow to sit for at least 10 minutes after removing from oven.
