It’s no secret that I love mushrooms. I really love mushrooms. I think mushrooms belong in almost every dish. (Unlike cayenne pepper, which I think belongs in every dish.) My stuffing stuffed mushrooms might go down in history as my favorite recipe ever. I wanted to create a new recipe that mimicked my stuffing stuffed mushrooms, but one that didn’t require quite so much prep. That’s how my creamy mushroom spread was born.
Instead of hulling out mushroom after mushroom, I used sliced portobello mushrooms and mixed them with cream cheese, stuffing mix, parmesan and milk. Of course I also added in a little cayenne, because…cayenne.
