I’m the kind of girl who wishes it was Taco Tuesday every day. Thanks to my super easy recipe for Instant Pot Shredded Chicken Tacos, it can be every day. Heck, I just celebrated Taco Sunday! Then I celebrated leftover Shredded Chicken Nachos Monday! This is turning into the best week ever!
The great thing about my shredded chicken taco recipe is that it requires minimal prep. I had a box of Perdue Harvestland chicken breast tenderloins in my freezer. How To Make Shredded Chicken For Tacos
Want to make it Taco-Whatever-Night-Of-The-Week-It-Is at your house? Grab your favorite salsa and throw it in your Instant Pot (or other pressure cooker) along with the frozen chicken. Set the timer for 9 minutes and prep your toppings.
Instant Pot Shredded Chicken Tacos
Ingredients
- Frozen Chicken Breast Tenderloins
- Salsa
Instructions
- Add salsa to your Instant Pot. Use enough salsa to equal the minimum amount of liquid required for pressure cooking, based on the size of your Instant Pot.
- Add frozen chicken breast tenderloins to your Instant Pot.
- Cook on the pressure setting for 9 minutes.
- Once pressure is released, open Instant Pot and drain liquid.
- Shred chicken.
- Add to tortillas, along with your favorite taco toppings.

This easy, two-ingredient can be made to accommodate families of any size by simply adjusting the amount of chicken that is used.
After the pressure has been released from your Instant Pot, drain all of the liquid and start to shred. I return my Instant Pot liner back to the Instant Pot for this part, with it still on the keep warm setting.
That’s all it takes! I like to squeeze on a little lime to really brighten things up, but that’s totally optional. The best part about taco night is that everyone gets to make it their own. I’m a cheese, pico, cilantro, jalapenos, and sour cream girl myself!
