I firmly believe that white pizza is amazing, and that I don’t order it often enough. Somehow, I’ve neglected to attempt white pizza at home…until now. These mini white pizza waffles are only about ten minutes from the freezer to your mouth, so they’re going into heavy snack rotation around here.
You could absolutely make these on a full-sized waffle, but I’m going for an appetizer/small snack by using Kellogg’s Eggo Minis Waffles. Did you know that Eggo Waffles now have colors and flavors from natural sources?
I layered prepared pesto sauce and a little extra minced garlic directly onto the frozen waffles. Pesto isn’t a part of a traditional white pizza, but I had it on hand and figured it would save me the trouble of seasoning up my olive oil. I’m all about skipping steps where I can.
I then topped the pesto-y, garlic-y waffle with a little shredded mozzarella and ricotta. That, my friends, is it. I could have gone fancier and mixed this all together and drizzled on the oil…but, again, simple was the mission of the day.
A quick trip to the oven at 350 degrees until the cheese was all nice and melty was the last step. These mini white pizza waffles are the perfect quick bite, and a surprisingly elegant snack. They’d make a great party appetizer, too! Of course, if you don’t like white pizza, Eggo Waffles make a great pizza base for whatever your favorite toppings might be!
