A few months ago I was at Disneyland, standing in line for Snow White’s Scary Adventures, when the idea for this cocktail was born. Discussions of a Halloween party and Greek Gods and Goddess-themed costumes eventually led to the Persephone Sparkling Pomegranate Cocktail.
It couldn’t be simpler to make-which is important when you’re thinking about party cocktails. You’ll need grenadine, pomegranate arils, and something sparkling. Champagne, Prosecco, your favorite sparkling white…even a little sparkling grape juice will work if you want a non-alcoholic option.
In some versions of the Persephone story, she eats three pomegranate seeds. In some, she eats six. Using a more is better philosophy, I say place six pomegranate arils in each flute. This is the only part of the drink you can prepare ahead of time. Luckily it’s only two more simple steps, so serving your drinks won’t take you away from any hosting duties for long.
Pour in your Champagne (or whatever sparkling beverage you decided to use) over the arils. The bubbles cause the arils to sink and float, which is pretty fun to watch.
Finish off with a splash of grenadine.
