I had a roll of refrigerated pie dough left over from my Disney inspired churro cookies. I decided the only way to go was to try my hand at some mini cherry pies. Some really, really easy cherry pies. As in pre-made dough and store bought filling easy. You know I love to skip steps in the kitchen.
I started by using a circle cookie cutter on the pie crust. Now is where I politely ask you to ignore those sticks. I planned to make cherry pie lollipops but that didn’t pan out. Removing the sticks equaled Pinterest fail avoidance.
Careful cutting means you can get a fair amount of circles from your crust. If you’re feeling adventurous, take the scraps and roll them out and cut those, too. Instead of adventurous, I was feeling lazy. I just tossed my scraps in the trash.
To those crust circles I added a small spoon of cherry pie filling. Yep…from a can. Totally skipped the “from scratch” on this. Just because you can bake from scratch doesn’t mean you have to bake from scratch. Top with another crust circle and use a fork to seal the edges. Bake according to the directions on your pie crust packaging. Just make sure you keep a close eye on things…they’ll cook very quickly!
I gave the top crust a coat of melted butter and sprinkled with sugar before baking. Making a glaze to dip them in after baking is another delicious option. It’s pie. It’s pretty hard to make a bad move here outside of burning them.
See…told you they were ridiculously easy. And delicious. And kind of cute, even without the lollipop stick.
