The Summer of Pudding is winding down. We’re getting ready for Back-To.School season. Could fall and fall flavors be far behind? I’ve shared my Frozen Monkey Chocolate Pudding and my Berry Stripe Tapioca Pudding so far. Why not end summer with a bang with one last recipe. This time I’m sharing an easy but delicious recipe for Salted Caramel Rice Pudding. And by easy, I mean blink-and-you-could-miss-it easy. And we’re getting this to you just in time for National Rice Pudding Day on August 9th.It starts with caramel and cream. Or milk. Or half & half. Or water if you have none of the above. I love using the caramel bits you can find in the baking aisle with chocolate chips. They melt quickly and there’s no need to unwrap dozens and dozens of caramel squares. Place the caramel bits in a microwave safe bowl and pour in just enough liquid to not quite cover the top of the bits. Microwave on high for one minute, adding more time in 15 second increments if the caramel is not fully melted after stirring. If things are a too runny, add a few more caramel bits. Too thick? Add another splash of liquid.Once your caramel sauce is ready, pour on top of a bowl full of Kozy Shack Rice Pudding.Top the caramel with a light sprinkle of sea salt. It’s the perfect “summer’s almost over but it’s not quite fall” treat!
