I’ve never met a taco I didn’t like. Whether it’s Taco Tuesday or any other day of the week, it’s always a great time for Taco Night! My current obsession? Street tacos. I love the tortilla to filling ratio that you get with the smaller tortillas. They’re perfect for eating on the go, snacks, cookouts and more. Today I’m making street tacos with a twist. Instead of my go to chicken or beef, these tacos are stuffed full of Eckrich Smoked Sausage!

Eckrich Smoked Sausage is naturally hardwood smoked and crafted with just the right blend of spices for a truly rich, savory taste. Cooking with Eckrich means you can put a delicious homemade meal on the table quickly, so you can spend less time in the kitchen and more time with your family. Look for it in your grocer’s deli section. All you need is some Eckrich and whatever’s in your cupboard to make a delicious meal – no wonder it’s one of my go to ingredients!

Smoked Sausage Street Tacos
Ingredients
  • Eckrich Smoked Sausage
  • Peppers
  • Onion
  • Lime Juice
  • Small Tortillas
  • Oil
Instructions
  1. Cut Eckrich Smoked Sausage into 1/2 inch slices.
  2. Slice peppers and onions into thin strips.
  3. Drizzle oil into skillet.
  4. Brown peppers, onions and smoked sausage in skillet over medium high heat.
  5. Remove from heat when desired brownness is achieved and toss with a splash of lime juice.
  6. Stuff small tortillas with the smoked sausage, peppers and onions and add your favorite taco toppings.

This is one of those “there’s no need to measure” recipes. You really can’t get it wrong. Love peppers? Add more peppers! Want to skip the onions? Skip the onions! Heck, don’t have lime juice on hand? Lemon juice will work, too! Any citrus will give a nice, bright kick to the flavors. You can add on all of your favorite taco toppings, like lettuce, tomatoes, cheese or sour cream, or you can also serve them up straight from the skillet without adding anything at all!
