Create Your Gingerbread Paddock
Start by designing your paddock. You can create your own or grab this template. If you decide to use prebaked gingerbread, you can easily create the shapes you need by carefully cutting the gingerbread with a serrated knife. Once you’ve created your pieces, use icing as the glue to hold them together. Place the gingerbread pieces on a cake board that has been covered with a thin layer of vanilla frosting and sprinkled with sugar crystals or coconut to create snow.
Design Your Gingerbread Roof
Add a dot of icing to the back of chocolate nonpareils and use them to “shingle” your roof. More icing can be piped along the roofline to create snow.
Make A Pretzel Stick Fence
Use melted white candy melts to hold together a pretzel stick fence. Make sure you give this plenty of time to set as the fence will be delicate. Pipe icing to create a snow-covered fence and use more icing to hold the fence in place on your cake board.
Create Marshmallow Trees
Cut mini marshmallows in half at a diagonal and shake them in a plastic bag with green sugar sprinkles. Coat an ice cream sugar cone with vanilla icing and press on the sugar-coated marshmallows.
Make Chocolate Shutters
Use chocolate mints and cookie icing to create shutters and doors for your paddock. You can trim down the mints to create different sizes. You’ll want to make these ahead of time-cookie icing can take up to a full day to harden!
Decorate your Gingerbread Paddock
Use a variety of candies to add the finishing touches to your gingerbread paddock. Sour gummy rings make great Christmas wreaths. Mini frosted shredded wheat cereal serves as simple snow-covered hay bales.
